Chewy Hazelnut and Chocolate Chunk Cookies

One of my major cravings throughout this pregnancy has been cookies. I used to like them, now I obsess over them and I have to have them in at all times!

Over the last few months I have had a great time testing out new flavour combinations on the quest to make the best batch of cookies. One of the flavour combinations I've gone back to several times is Chocolate and Hazelnut.

These ones are the perfect mix of chewy hazelnut cookie dough and melty dark chocolate chunks.

(Makes 25 Cookies)

INGREDIENTS

300g Plain Flour

100g Soft Dark Brown Sugar

100g Caster Sugar

160g Cold Butter

1 Egg

100g Dark Chocolate

100g Hazelnuts

METHOD

Preheat your oven to 160°C.

Add the plain flour, butter (make sure it’s cold or they don’t work as well), sugars and egg into a mixing bowl.

Wisk until they form a stiff dough. While the dough is forming place your hazelnuts into a blender and pulse until they form small chunks. Roughly dice your dark chocolate into medium sized chunks.

Add the blended hazelnuts and chocolate chunks to the cookie dough and mix until well incorporated.

Pick out tablespoon sized pieces of cookie dough, roll into a ball, then flatten slightly on a prelined baking sheet.

Place in the oven for approximately 10 to 12 minutes, they will look sightly under when you bring them out but will continue to cook slightly on the pan as they cool!
