Chewy Apple and Oat Cookies

As the weather has started to turn chilly the last few days, I am all about the autumn baking. As many of you know Cookies have been one of my top food cravings through this pregnancy and I've been playing around some of my old recipes and different flavour combinations.

One of my favourite autumn treats so far are these Chewy Apple and Oat Cookies. They are a revamp of my old Apple and Oat Cookie recipe, with more flavour and a softer chewier texture. Definitely worth a try if your looking for something to bake this weekend!

Makes 16 Cookies

INGREDIENTS

180g Plain Flour

120g Oats

200g Soft Brown Sugar

160g Cold Butter

1 Large Egg

1 Cooking Apples

1 Heaped Teaspoon Mixed Spice

1 Heaped Teaspoon Cinnamon

METHOD

Preheat your oven to 160°C.

Place the butter, sugar, flour, oats, cinnamon, mixed spice and the egg in a large mixing bowl.

Beat the ingredients together to form the dough.

Peel and finely dice the cooking apples, add them to the mixing bowl and fold in.

Take approximately a tablespoon of the dough, roll it and place on a pre-lined baking tray.

Place in the oven for approximately 10 to 12 minutes, or until the tops go golden brown.

Leave to cool slightly before serving and enjoy!


N.B. These are definitely best eaten withing 48 hours of baking, they will last longer but they get a bit sticky the longer you leave them!
