Triple Chocolate Chunk Cookies

As many of you are probably aware one of my biggest cravings during my pregnancy was cookies. Cookies of any flavour but particularly homemade cookies. This experimenting led me to create a whole load of new cookie recipes that I am really happy with.

One of my favourites that I made on repeat, particularly over the last trimester were these Triple Chocolate Chunk Cookies. Chocolate cookie dough, stuffed with white and dark chocolate chunks, what’s not to love?

INGREDIENTS

250g Plain Flour

50g Cocoa Powder

160g Butter

200g Soft Brown Sugar

1 Egg

100g Dark Chocolate

100g White Chocolate

METHOD

Preheat your oven to 160°C.

In a large mixing bowl add your flour, cocoa powder, sugar, butter and egg.

Mix the ingredients together until they form a stiff dough.

Roughly dice your dark and white chocolate to form varying sizes of chocolate chunks. Add them into the mixing bowl with the dough and combine the two.

Pre line several baking sheets with greaseproof paper. Then take a tablespoon of the cookie dough mixture, roll it into a ball, place on the baking sheet and press down slightly with the palm of your hand to squish the dough ball slightly.

Repeat, leaving some space between each cookie dough ball so it can expand in the oven. Once your baking sheet is full, place in the oven for 10 to 12 minutes.

Take the cookies out of the oven and leave to cool slightly before enjoying them!
