Double Chocolate Hazelnut Cookies
These Double Chocolate Hazelnut Cookies are as good as they sound. Soft extremy chocolatey, gooey cookies with toasted hazelnuts mixed in for good measure. Very simple to make and perfect for a wet day like today!
INGREDIENTS
200g Butter
200g Caster Sugar
150g Soft Brown Sugar
1 Large Egg
150g Plain Flour
100g Cocoa Powder
50g Chocolate Chunks
50g Hazelnuts
METHOD
Preheat your oven to 170°C.
Place your hazelnuts on a baking tray and put in the oven for 5 to 10 minutes.
While the haznuts are toasting add the butter, caster sugar, soft brown sugar, plain flour, cocoa powder and an egg to a large bowl and mix together to form the dough.
Take the hazelnuts out of the oven, shake the tray to remove most of the brown skin. Then roughly chop the hazelnuts.
Add your chocolate chips and toasted hazelnuts to the cookie dough and mix together.
Take approximately a tablespoon of the dough, roll it into a ball.
Place the ball on a pre lined baking tray and press it down slightly.
Repeat until the dough is used up, leaving a decent space between each cookie.
Put the tray in the oven for approximately 10-12 minutes.
Leave to cool slightly on the tray before moving on to a baking rack to fully cool.
