Bitesize Brookies

If your looking for something fun to bake this week why not try these Brookies? They are mini brownies stuffed with a cookie dough and are incredibly moorish.

I still haven’t found a brownie recipe that works and tastes as good as Betty Crocker's Chocolate Fudge Brownie box mix or the Ghirardelli Triple Chocolate brownie mix so I’ve use those for the base but if you have a good brownie mix that should work well too.

INGREDIENTS

1 Box /Bag Brownie Mix

2 Eggs

Vegetable Oil

Water

100g Caster Sugar

100g Soft Light Brown Sugar

100g Soft Dark Brown Sugar

200g Butter

250g Plain Flour

100g Chocolate Chunks

METHOD

First preheat your oven to 180°C

Then make up the brownie mix as directed on the packet.

In a separate bowl start to make up your cookie mixture by combining the plain flour, butter, one egg and sugars together in a large bowl.

Once the cookie dough is combined add in the chocolate chunks and stir through.

Put your mini cupcake cases in to the mini cupcake baking tray, if you want larger brookies you could use a regular size pan and bake for slightly longer.

Fill each cupcake liner up half way with brownie mixture.

Take half a teaspoon of cookie dough, roll it into a ball and place in the middle of the brownie mixture.

Repeat until all the cases are filled.

Put the muffin tray into the oven for approximately 10 to 15 minutes.

Take the tray out the oven and the brookies out of the tray to cool.

Eat hot with ice cream or cool by themselves.
