Cheats Snow Brookies

If you’re looking for a quick and easy bake to impress friends these Brookies are for you. They use a packet brownie mix as a base hence the name ‘Cheats’ Snow Brookies! Using a packet mix means these come out great every time in all their soft chocolatey goodness!

I’ve used Ghirardelli Triple Chocolate Brownie mix from COSTCO as its what we’ve got in the house at the moment. Usually we have Betty Crockery Chocolate Fudge Brownie mix and I would add Chocolate Chunks to the mix.

INGREDIENTS

1 Packet of Brownie Mix

Water

Egg

Vegetable Oil

150g Plain Flour

150g Chocolate Chunks (Optional)

Icing Sugar

METHOD

Preheat your oven to 180°C.

Make your Brownie mix up as directed on the box.

Add the 150g Plain flour to the mix and stir through. If you want to add chocolate chucks add them with the flour and mix in.

The dough should now be more of a dry cookie dough than a wet Brownie batter.

Pour some icing sugar into a small bowl.

Take approximately a table spoon of the dough out. Roll it into a ball then roll it through the icing sugar until well coated.

Place on a pre-lined baking tray and press down slightly.

Bake for 12 to 15 minutes.
