Gluten Free Triple Chocolate Cookie Bars

As most of the U.K. is now in a second lockdown I thought I would share these Gluten Free Triple Chocolate Cookie Bars to help make everything seem a bit better. The soft baked chocolate cookie dough is generously studded with white and dark chocolate chunks.

As I was sending them go my sister, I made the bars gluten free by using Doves Farm Freee Plain Flour. I’ve found their Freee Plain Flour and Self Raising Flour to work just as well as the gluten options when baking for myself.

Serves 18

INGREDIENTS

200g Gluten Free Plain Flour

200g Butter

350g Caster Sugar

1 Egg

50g Cocoa Powder

100g Dark Chocolate Chunks

100g White Chocolate Chunks

METHOD

Preheat your oven to 180°C.

Soften the butter in the microwave for a few seconds.

Add the softened butter, soft brown sugar, plain flour, egg, vanilla extract and baking powder to a large bowl and mix together to form the dough.

Once the dough is formed add your chocolate chips and mix together.

Grease your baking tray or trays. I’ve used three tin baking trays as I was sending the bars to my sister and giving some to my husband to take to work.

Press the dough into the bottom of the baking tray(s) then place in the oven for approximately 30 minutes.

Leave to cool in the tray before cutting into it.
