Apple and Oat Cookies

As the weather has started to turn chilly the last few days, I am all about the autumn baking.

One of my favourite autumn treats are these Apple and Oat Cookies. They are a great way to use the baking apples we picked from the tree in our garden.

The mixed spice gives them a great autumnal kick, definitely worth a try if your looking for something to bake this weekend!

INGREDIENTS

180g Cool Butter

350g Caster Sugar

275g Plain Flour

175g Oats

1 Large Egg

2 Cooking Apples

1 Heaped Teaspoon of Mixed Spice

METHOD

Preheat your oven to 150°C.

Place the butter, caster sugar, flour, mixed spice and the egg in a large mixing bowl.

Mix together to form the dough.

Peel and finely dice the cooking apples, add them to the mixing bowl and fold in.

Take approximately a tablespoon of the dough, roll it and place on a pre-lined baking tray, I tend to fit nine cookies to a baking tray.

Place in the oven for approximately 20 to 25 minutes, or until the tops go golden brown.

Leave to cool slightly before serving.
