Spinach, Courgette and Onion Spaghetti

As many of you know pasta in any form is my favourite thing to eat. One of my go to recipes prior to my kitchen being remodeled was this Spinach, Courgette and Onion Spaghetti.

It's a no fuss kind of meal, easy to make without to much thought and tastes amazing every time! I love how all the flavours from the herbs and oil mix together to elevate a simple vegetable pasta dish.

I can't wait to have a functioning kitchen again soon, I’ve got a feeling this will be one of the first meals I cook in it.

Serves 4

INGREDIENTS

1 Courgettes

1 Brown Onion

2 Large Handfuls of Spinach

300g Spaghetti

1 Teaspoon Oregano

1 Teaspoon Mixed Herbs

1 Teaspoon Basil

1 Teaspoon Minced Garlic

Basil Infused Olive Oil

Salt and Pepper to taste

METHOD

Put a pan of lightly salted water on a medium heat and bring to boil. Once boiling add the spaghetti and some olive oil. Leave to simmer until spaghetti is al dente.

In a frying pan add some basil infused olive oil and put the pan on a medium heat to allow the oil to warm.

Dice the onion and courgettes and add to the frying pan, stir while waiting for them to soften.

Once softened add the herbs, the minced garlic and some more basil oil.

Drain the pasta and add it to the frying pan.

Add the spinach to the pan and toss everything together until the spinach wilts.

Serve hot.
