Apple and Cinnamon Tart

Theres something about baking the first tart of Autumn that brings me so much joy!

This Apple and Cinnamon Tart is the perfect recipe to kick off the season. The warm, soft, cinnamon coated apples nestled into a light and crisp shortcrust pastry case, will get you right into the autumn baking mood!

Top it off with ice cream and you have the perfect weekend treat.

INGREDIENTS

225g Plain Flour

100g Salted Butter

60g Caster Sugar

3 Cooking Apples

20g Caster Sugar

1 1/2 Teaspoons Cinnamon

METHOD

Preheat the oven to 170°C.

Place the flour, butter and 60g of caster sugar in a large bowl.

Rub the ingredients together until they form a breadcrumb texture.

Add approximately a tablespoon or two of lukewarm water to the mixture and mix to form a dough.

Spread some flour on your countertop and roll out the dough to fit your tart dish.

Put the pastry into the dish, cover with baking paper and place in your baking beans or rice.

Place in the oven for 20 minutes, take off the baking paper and weights and put back in the oven for approximately 5 minutes for the pastry to bake through.

In the meantime peel and finely slice your apples.

When the tart case is out of the oven, start to layer the apple slices in a circular pattern until the case is filled.

Mix together the cinnamon and 20g Caster sugar. Pour the mixture onto of your apples.

Place the tart back in the oven for approximately 18 to 25 minutes so the apples go nice and golden.
