Tangy Vegetable Puff Pastry Tart

Tonight's meal has been this Tangy Vegetable Puff Pastry Tart. It’s super quick to make, topped full of vegetables making it perfect for a Wednesday night meal. The balsamic in the tomato sauce gives it a great little kick.

INGREDIENTS

1 Packet Ready Rolled Puff Pastry

1 Teaspoon Minced Garlic

1 Teaspoon Minced Chilli

1 Teaspoon Balsamic Glaze

1 Tablespoon Tomato Paste

A Pinch of Salt

1 Red Onion

1 Yellow Pepper

1 Courgette

4 Cherry Tomatoes

METHOD

Preheat your oven to 200°C.

Roll out your puff pastry on a pre lined baking tray. Fold over approximately 2cm of the edges of the puff pastry.

In a small bowl mix the tomato paste, minced garlic, minced chilli and balsamic glaze together.

Spread the tomato mixture over the middle of the puff pastry.

Thinly slice the red onion, yellow pepper and courgette and add on top of the tomato paste mixture.

Halve the cherry tomatoes and place on top of the other vegetables. Tuck in some basil leaves.

Drizzle some olive oil and balsamic glaze over everything and put in the oven for 10-15 minutes.

Serve hot.
