Cherry Tomato Tartlets

It’s Friday, the sun is shining in Cheshire and the tomatoes on our vines are ripe so I thought I'd share my recipe for Cherry Tomato Tartlets. I love how the pesto, tomatoes and mozzarella meld together on the flaky puff pastry! Honestly such a good quick and tasty meal.

Makes 4 Tartlets

INGREDIENTS

1 Packet Ready Rolled Puff Pastry

24 Cherry Tomatoes

4 Tablespoons of Pesto (I’ve used homemade basil pesto)

A Handful of Grated Mozzarella

METHOD

Preheat your oven to 200°C.

Roll out the packet of puff pastry and cut into quarters.

Spread a tablespoon of pesto in the centre of each puff square.

Cut your cherry tomatoes in half and split them between the top of your tarlets.

Sprinkle some mozzarella over top of each tartlet (I’ve used the ASDA freefrom version).

Place the tarlets in the oven for approximately 15 to 20 minutes.

Take out of the oven and serve warm.
