Spinach Gnocchi with Chorizo and Vegetables
This Spinach Gnocchi with Chorizo and Vegetables is an easy Monday evening meal. Roasted mixed vegetables tossed with pan fried chorizo and spinach gnocchi.
I recently came across Rana Pan Fried Spinach Gnocchi in my local Sainsburys and thought I needed to give it a try, with this being the result. I was really impressed with the Gnocchi it has a great flavour to it and I’ll definitely be trying more of their range.
INGREDIENTS
1 Packet of Rana Pan Fried Spinach Gnocchi (I’m sure other brands must make this too)
150g Chorizo
1 Red Pepper
1 Red Onion
1/2 a Courgette
1/2 a Aubergine
Butter
METHOD
Preheat your oven to 200°C.
Finely dice the vegetables and place on a baking tray with some olive oil. Place jn thr oven for 15 to 20 minutes and toss mid way.
While the vegetables are cooking bring a pan of water to the boil and cook the gnocchj as directed. Drain the gnocchi and put to the side.
Finely dice the chorizo and add to a large frying pan with a small scoop of butter. Fry for a few minutes over a medium heat, then add in the gnocchi.
Fry until the gnocchi becomes slightly crispy on the outside then take the vegetables out of the oven.
Add the vegetables to the gnocchi and chorizo, mix everything together and serve hot.
