Lemon Gnocchi

The last few days have been gorgeous in Cheshire, so today I thought I'd share this Lemon Gnocchi. It's light and tangy with a little kick from the chilli and garlic. Such a tasty dish to enjoy in this warm weather.

INGREDIENTS

1 Packet of Gnocchi

1 Red Onion

1 Chilli

1 Teaspoon Minced Garlic

160g Mangetout

2 Large Handfuls of Spinach

1 Tablespoon Lemon Juice

METHOD

Finely dice the red onions and chilli.

Add to a large frying pan with a teaspoon of minced garlic and some olive oil (I've used some homemade chilli oil). Put over a medium heat and stir intermittently until the onions have softened.

In the meantime put a pan of water on to boil, when it reaches a rolling boil add the gnocchi.

Cook until the gnocchi floats to the top of the water and drain.

Roughly chop the mangetout and spinach, add to the frying pan along with the gnocchi.

Add the lemon juice to the pan and toss everything together until the Gnocchi starts to brown a bit.

Serve hot.
