Lentil Tacos
When you fancy a filling taco you need to try these Lentil Tacos. The spicy lentil filling is made from simple store cupboard ingredients and topped with diced cucumber, mint and creamy vegan feta. It’s easy to make and is a great meal.
I’m using the Violife White Greek Block as my feta option, if uou’re not fussed with making these vegan you could use any other feta you have.
INGREDIENTS
1 Red Onion
1 Tin Green Lentils
1 Tin Chopped Tomatoes
1 Teaspoon Paprika
1 Teaspoon Cumin
1 Teaspoon Cayenne Pepper
1 Teaspoon Garlic Salt
1 Teaspoon Onion Salt
8 Wholewheat Tortillas
1/2 Cucumber
21 Mint Leaves
1/2 a Block of Vegan Feta
METHOD
Finely dice the red onion. Add it to a deep frying pan with some olive oil and place over a medium heat to soften.
Once the onions have softened, drain the tin of lentils and the lentils to the onions.
Sprinkle the spices over the lentils and mix it all together.
Leave to simmer for a few minutes before adding the tin of tomatoes.
Mix everything together and leave to simmer down slightly.
While the lentil filling is cooking finely dice the cucumber, feta and mint leaves. Place to the side for later.
Toast the tortillas for a few minutes each side over a hot grill or open flame.
While warm fold them into shape ready to add the lentil filling and top with some cucumber, mint and feta.
