Garlic and Herb Smashed Potatoes

The perfect amount of soft and crispy. These garlic and herb Smashed Potatoes are so tasty and very easy to make. A great weekday side dish, very worth giving a go.

INGREDIENTS

1kg Red Potatoes

1 Vegetable Stock Cube

Oil

1 Tablespoon Smoked Minced Garlic

1 Tablespoon Mixed Herbs

A Large Pinch of Sea Salt

1 Tablespoon Cracked Black Pepper

METHOD

Preheat your oven to 200°C.

Put a large pan of water in the stove. Bring to the boil. Add your potatoes and a vegetable stock cube. Leave the potatoes to cook through for approximately 15 to 20 minutes.

Once cooked through drain the potatoes and transfer them to a lined baking sheet.

Using the back of a fork ‘smash’ the potatoes down a bit so some of the fluffy inside comes out.

Drizzle your oil all over the potatoes.

Then sprinkle the salt, mixed herbs, black pepper and smoked minced garlic over the potatoes.

Put the tray of potatoes in the oven for approximately 15 to 20 minutes.

Serve hot alongside your favourite meals.
