Lemon and Thyme Potatoes

This time of year I love to have potatoes as a side dish. These Lemon and Thyme Potatoes are a great way to add new flavours to your go to meals. They’re so simple to make I almost didn't post the recipe but they taste too good not to share!

Serves 4

INGREDIENTS

4 Large Potatoes

150g Butter

1 Lemon

1 Teaspoon Thyme

Salt and Pepper

Rapeseed Oil

METHOD

Preheat your oven to 200°C.

Peel and dice your potatoes.

Place them on a large baking tray with the butter, the zest and juice of one lemon, the thyme, a good sprinkle of salt and pepper and a slosh of rapeseed oil.

Toss everything together in the baking tray until the potatoes are well coated.

Place the tray in the oven for approximately 30 minutes, tossing the potatoes at the 15 minute mark.

Enjoy along side your favourite meal!
