Tuna Sweetcorn Melts

Although I'm not a big sandwich lover when I do feel in the mood for a sandwich it tends to be a melt I’m craving.

Unfortunately I’m lactose intolerant so I find it hard to get one I can eat in my local coffee shops. This has pushed me to make my own at home with Lactofree cheese instead.

This Tuna Sweetcorn Melt is my usual go to when I get the sandwich craving, it can be made using a toastie maker or in a hot frying pan, depending on which you have to hand.

Serves 2

INGREDIENTS

4 Slices of Bread

Butter

1/2 Tin Tuna

1 Tablespoon Garlic Mayonnaise

2 Tablespoons Sweetcorn

1/2 Cup Cheddar Cheese

METHOD

Preheat toastie maker or a large pan.

Take two slices of bread, butter them on both sides.

In a small bowl mix together the tuna, sweetcorn, garlic mayo and grated cheddar cheese.

Place approximately 2 tablespoons of the tuna mix in the middle of one slice of bread.

Add the second slice and put in your toastie maker or into a pan on high heat for a couple minutes each side. The bread should go golden brown.

Cut in half and serve hot with a side salad.
