Smashed Sweet Potatoes

If you're looking for some comfort to bring you into the weekend these Smashed Sweet Potatoes are the way to go! They are double baked sweet potatoes in minced garlic and mixed herbs.

These make a great side dish whether you are pairing it with your favourite freezer dish for an easy midweek meal or sharing with friends as part of a more complex meal. So why not give it a go?

INGREDIENTS

4 Medium Sweet Potatoes

Rapeseed Oil

A Large Pinch of Salt

4 Cloves of Garlic

1 Tablespoon of Mixed Herbs

METHOD

Preheat your oven to 200 C.

Chop your potatoes roughly into 2 cm thick circles and place them onto a large baking tray.

Pour rapessed oil over the potatoes, then sprinkle the salt and mixed herbs over top. Mince your garlic and add to the tray. Toss everything together until the potatoes are well coated.

Place the potatoes into the oven for approximately 20 minutes.

Take the potatoes out of the oven, roughly ‘smash’ them up using the back of a fork.

Drizzle some more oil over the top and place them back in the oven for approximately another 20 minutes.

Thank the potatoes out and enjoy!
