Garlic Chilli Prawns

I spent a large chunk of my high school holidays in the south of Spain. From this I gained a love of seafood, one of the dishes regularly ordered at any tapas restaurant we went to was garlic prawns. It’s is such a simple dish to make at home. Its a crowd pleaser as part of a party spread or you can have it by itself as a main meal with some freshly baked bread and a large glass of wine.

What I love about this recipe is that it works as well with fresh prawns as it does with frozen. If you’re using frozen make sure to defrost them before frying them.

Serves 8-10

INGREDIENTS

Half a Nulb of Garlic

1 Chilli

150g Butter

A Handful Fresh Parsley

1 kg Prawns (I used Frozen Atlantic Prawns)

METHOD

If you are using frozen prawns start by defrosting the prawns.

Deseed and finely dice the chilli.

Peel and finely dice the garlic.

Put a frying pan onto a high heat.

Add the garlic and chilli to the pan with knob of butter (roughly 150g).

Leave the butter melt. While the butter is melting finely chop up your parsley and add to the pan.

Mix everything together, then add the prawns.

Toss all the ingredients together and cook until the prawns are cooked through.

Serve hot with some fresh bread.
