Raspberry Limoncello Frozen Fizz

It's my husband's 30th birthday on Monday and we are starting the celebrations today! I came across a bottle of limoncello in the back of the cupboard and thought I needed to try to make something with it. What I wasn’t expecting was to find a new favourite cocktail which tastes like summer in a glass!

INGREDIENTS

2 Cups of Ice

1 Cup Frozen Raspberries

100ml Limoncello

1/2 Bottle Prosecco

Handful of Fresh Mint

METHOD

There are two ways to make this based on if you care about having raspberry seeds in you drink or not?

The quick and simple method is to add your ice, raspberries, limoncello and mint to your blender. Blend until mostly smooth.

Add your prosecco to the blender. Blend for 30 seconds to a minute.

Pour into your glasses and garnish with a couple raspberries.

If you would prefer to not have raspberry seeds in your drink first put the frozen raspberries in the blender, blend until smooth.

Strain the raspberries and put the juice in the blender with the ice, limoncello and mint to your blender. Blend until mostly smooth.

Add your prosecco to the blender. Blend for 30 seconds to a minute.

Pour into your glasses and garnish with a couple raspberries.
