Duck Tacos

If you’re looking for something a it different for your taco Tuesday, these Duck Tacos are a great choice. Made with a store bought crispy duck and paired with homemade guacamole and salsa this is a tasty and easy midweek meal!

N.B. I used TESCO's Crispy Aromatic Half Duck, but most supermarkets sell a version.

INGREDIENTS

1 Crispy Duck

1 Packet Mini Tortillas

1 Jar Sweet Drop Peppers

For the Guacamole:

2 Avocados

1/2 a Red Onion

1 Tablespoon Minced Garlic

1 Teaspoon Minced Chilli

Juice of 1/2 a Lime

1 Handful Fresh Corriander

For the Salsa:

1/2 a Red Onion

1 Teaspoon Minced Garlic

Juice of 1/2 a Lime

3 Tomatoes

METHOD

Cook the duck as directed on the packet.

While the duck is cooking make the guacamole by first peel, pit and mash the avocados in a small bowl. Finely dice half a red onion and corriander. Add them to the bowl of avocado with the mixed garlic, chilli and juice of half a lime. Mix everything together.

Then make your salsa by finely dicing the tomatoes and half a red onion. Place into a bowl with a teaspoon of minced garlic and squeeze over the juice of half a lime. Mix everything together and put to the side.

Once the duck is out of the oven shred the meat from the bones and put to one side.

Heat a small frying pan up, toast the tortillas for a few seconds each side.

Add the guacamole to the centre of each tortilla.

Layer over some of the duck, then a couple teaspoons of salsa and some sweet drop peppers.
