Carrot Cake
To celebrate my husband's 30th birthday I've made him a Carrot Cake as requested. Definitely the best carrot cake recipe I've tasted so I thought I’d share it with you.
INGREDIENTS
3 Eggs
150g Soft Dark Brown Sugar
110g Vegetable Oil
150g Wholemeal Flour
15g Baking Powder
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
75g Desiccated Coconut
75g Mixed Fruit
55g Walnuts
300g Grated Carrot
250g Cream Cheese
250g Butter
350g Icing Sugar
METHOD
Preheat your oven to 200°C.
In a large mixing bowl add the eggs, soft dark brown sugar, vegetable oil, wholemeal flour, baking powder, cinnamon and nutmeg.
Mix them all together until well combined.
Once the mixture is smooth, add the desiccated coconut, mixed fruit, walnuts and grated carrot to the bowl.
Mix into the batter.
Grease your baking tins with butter or oil.
Add the batter to the baking tin and put it in the oven for 30 minutes.
Test to check if the cake is done, if so take iut the oven and leave to cool before icing.
While the cakes cool make up your cream cheese frosting by whipping your softened butter and incing sugar together. Once well creamed mix in the cream cheese. Put the frosting in the fridge until the cakes cool.
Put together your cake using the frosting in the middle and on the top. This frosting is not very stiff so I put the cake back in the fridge until we want to eat it!
