Baked Apple, Sultana and Cinnamon Oats

The weather in Cheshire has turned cooler over the last week and has had me craving something warm and comforting to wake up to. These Baked Apple, Sultana and Cinnamon Oats are a great way to start the day or have as a mid morning snack. I love how these flavours blend together to give a cosy autumnal taste.

I like to make a batch of these at the weekend, slice them up and store them in the fridge. It makes it easy to wake up in the morning, pop a few into a bowl and warm in the microwave on high for two minutes.

INGREDIENTS

2 Cups Oats

2 Cups Almond Milk

1 Cooking Apple

1 Cup Sultanas

1 Egg

2 Teaspoons Cinnamon

1 Teaspoon Mixed Spice

1/4 Cup Dark Brown Sugar

METHOD

Preheat your oven to 180°C.

Pour your milk into a mixing bowl, crack in your egg and whisk together.

Add in your oats, spices and sugar to the mixing bowl. Stir everything together.

Pour the mixture into a medium sized pre lined baking tray.

Peel and dice your apple. Add the apple and sultanas to the oat mixture and stir through. Place in the oven for roughly 40 minutes.

Take out of the oven and leave cool slightly before chopping into slices.

Place in an airtight container and store in the fridge for up to a week. When you want a slice, pop into a heatproof bowl and microwave for approximately 2 minutes on high.
