Crushed Peas

Today I thought I’d share a way to elevate a freezer staple … frozen garden peas! These Crushed Peas are your standard frozen peas jazzed up and ready to use as a side dish or a sauce. They’re paired with buttered softened onion and a stock cube to give them a great taste then blended. So easy to make on a busy week night and makes the ordinary feel special!

Serves 4

INGREDIENTS

250g Frozen Garden Peas

1/2 an Onion

150g Butter

1 Vegetable Stock Cube

METHOD

Peel and dice half an onion. Add it to a frying pan with the butter and place over medium heat.

Stir until the onion is softened then add the stock cube and 50ml of water to the pan. Bring to the boil then add the peas.

Cook for approximately 5 minutes before transferring the contents of the pan to a blender.

Blend together the mixture and serve hot!
