Chocolate Sponge Cake
Such a nice day for a spot of Sunday baking! I woke up thinking about chocolate cake this morning so decided to whip this super simple chocolate sponge up.
INGREDIENTS
4 Large Eggs
260g Butter or Margarine
180g Self Raising Flour
80g Cocoa Powder
300g Caster Sugar
METHOD
Preheat the oven to 180°C.
Add all the ingredients to a large mixing bowl and whisk together, I find it's best to use an electric whisk if available. The mixture will first be fairly dark, keep mixing until it lightens up.
Grease your baking tin or tins before adding the mixture in. Remember to form a small depression in the middle of the mixture so the cake doesn't form too much of a peak when it rises.
Put the pan or pans in the oven. If using one large pan you'll need to bake for approximately 45-50 minutes, if using two smaller pans the cakes will need to bake for approximately 20-25 minutes.
To test if the cakes done use a skewer to prod the middle of the cake, if it comes out clean the cakes done, if it comes out with batter on the skewer put back in the oven for a bit longer.
Take the cakes out of the pan to cool before decorating with your favourite icing and some chocolate shavings. I hope you enjoy!
