Spicy Vegetable Rice

Wednesday evenings call for easy, tasty meals and this Spicy Vegetable Rice will not disappoint. It can be made as either a side dish to an oven meal or it can standalone as a main meal. The kick from the cayenne pepper pulls thus simple meal up notch. I hope you enjoy it!

INGREDIENTS

1 Courgette

1 Brown Onion

1 Red Pepper

1 Teaspoon Minced Garlic

1 Teaspoon Paprika

1/2 Teaspoon Cayenne Pepper

1 Cup Rice

Salt and Pepper to Taste

METHOD

Place a cup of rice into a medium pan with two cups if cold water. Put the pan over a medium / high heat. Bring the water to the boil, turn it down and leave it to simmer until the rice is cooked through.

Peel and dice your vegetables. Add the onion, pepper and courgette to a large frying pan with some rapeseed oil, the cayenne pepper, minced garlic, paprika and salt.

Place over a medium heat and stir intermittently until the vegetables soften.

Drain the rice and add it to the frying pan.

Serve warm and enjoy!
