Tuna and Summer Vegetables Pizza
This Tuna and Summer Vegetables Pizza is perfect for hot summer nights. Several years ago I visited Rome with some friends, we stopped for pizza up the road from Piazza San Pietro and I had a tuna pizza similar to this while sat in the sunshine. It was one of the best pizzas I have ever had and I thought I’d try to recreate it. It is delicious and best of all for me dairy free!
INGREDIENTS
1 Portion Pizza Dough
2 Tablespoons Tomato Paste
1 Small Courgette
1 Small Red Onion
Handful Cherry Tomatoes
1/2 Tin Tuna
Handful of Fresh Rocket
METHOD
Preheat your oven to 200°C.
Roll out you pizza dough and place on a pre lined baking tray.
Spread two teaspoons of tomato paste evenly onto the base of your pizza.
Finely slice your onion, courgette and chop your cherry tomatoes in half.
Add the vegetables to the top of the pizza.
Drain your tinned tuna and flake half a tin onto the pizza.
Put the pizza into the oven for approximately 15 to 20 minutes so the vegetables cook through and the edges are crispy.
Take the pizza out of the oven, wash your rocket and add it to the pizza.
Serve hot with a sprinkle of sea salt.
