Stuffed Baked Haddock

Thought I'd share this really easy Stuffed Baked Haddock we had for dinner tonight. Such a simple recipe that packs great flavour.

Serves 2

INGREDIENTS

2 Haddock Fillets

1 Handful Chopped Spinach

1 Thin Sliced Red Onion

1 Teaspoon Tomato Paste (works well with Sundried Tomato Paste too)

1 Large Pinch Rosemary (fresh or dried)

1 Large Pinch Garlic Granules

1 Large Pinch Mixed Herbs

1 Large Pinch Salt

1 Large Pinch Paprika

METHOD

Preheat the oven to 200°C.

Lay down a large piece of baking paper, sprinkle some flour in the middle.

Rinse and dry the Haddock fillets, place them side by side skin side down on top of the flour on the baking paper.

Rub the tomato paste on to the flesh side of the fillets. Sprinkle over the herbs so they coat the flesh side of the fish and top with the onion and spinach.

Pull the sides of the baking paper up so the fillets fold into each other and roll the paper down towards the fish.

Twist the ends of the baking paper and tuck into the middle fold. You should have a parcel which looks similar to the second picture.

Wrap the baking paper parcel in tin foil and place in the warmed oven for approximately 20-25 minutes to allow the fish to bake. Unwrap and serve hot.

This also works well on the barbecue.
