Honey and Chilli Salmon

I love this simple salmon recipe. It requires so few ingredients and effort to make, which in my mind makes it a great midweek meal.

Serves 2

INGREDIENTS

2 Salmon Fillets

1/2 Teaspoon of Minced Chilli

2 Teaspoons Honey

1 Red Onion

Fresh Thyme

METHOD

Thinly slice the red onion. Lay half of it in the middle of a piece of foil. Add a sprinkle of fresh thyme on top of the onion.

Place your salmon skin side down. Rub a fingertip of minced garlic into the flesh side of the salmon, then a teaspoon of honey on top of the chilli.

Place the salmon skin side up on top of the onion.

Wrap the foil up around the salmon.

Put on a hot BBQ or in an oven at 200°C for 10 minutes.

Unwrap the tin foil and serve hot.
