Simple Tomato and Garlic Pasta

This pasta is so quick and simple to make. It can be adapted using any leftover vegetables or meat you have to hand, making the variations endless and it one of my favourite recipes when I need to eat in less than 20 minutes.

I tend to keep a portion of roasted vegetables in my freezer so I can use it when I want a quick meal so that’s so what I’ve used in this meal.

Serves 4

INGREDIENTS

300g Pasta

1 Tin / Tube Tomato Paste

2 Tablespoons Minced Garlic Paste

Olive Oil

Optional: Leftover Vegetables / Meat, Tinned Fish.

METHOD

Top up a pan with cold water, put on a medium heat and bring to boil. Once boiling add the pasta. Leave to simmer until pasta is al dente.

If you want to add leftover meat or vegetables, warm them on the microwave whole the pasta cooks. As mentioned previously I’ve used roasted vegetables from my freezer in this meal.

Drain the pasta and place back into the pan over a low heat.

Add the tomato paste and minced garlic paste. If you are using leftover vegetables / meat or tinned fish add it also.

Drizzle over approximately 3 large tablespoons of olive oil to help disperse the tomato and garlic pastes.

Mix together so everything is well combined and the pasta is coated.

Serve warm with some grated parmesan.
