Bacon and Tomato Pasta Salad

Today I'm hoping to bring the sun back out with one of my favourite summer recipes. It’s my mums Bacon and Tomato Pasta Salad.

The salad takes around 15 minutes to put together, has six ingredients and tastes amazing. I love making this on a Sunday evening and leave in the fridge to have for lunch across the next week.

Serves 6

INGREDIENTS

500g Pasta

1 Packet Bacon

3 Salad Tomatoes

Handful of Fresh Parsley

Garlic Oil

Olive Oil

METHOD

Put a pan of salted water on to boil. When water gets to a rolling boil add a slosh of olive oil and your pasta. Cook until the pasta is al dente, drain and put to the side.

While the pasta is cooking fry the bacon in a bit of oil on a medium heat until crispy.

Take from the pan, and dice the bacon into small-medium chunks.

Place the tomatoes into a bowl, pour over boil water, leave for a few minutes before removing the skin from the tomatoes.

Chop up the tomatoes and parsley leaves. Mix them together with the pasta, bacon, garlic oil and olive oil.

Serve warm or cool.
