Simple Strawberry Coulis

I thought it may be useful to share my homemade Strawberry Coulis recipe with you today. So you can use it if you want to try making the Victoria Sponge Cake I posted yesterday.

INGREDIENTS

2 Cloves

1 Star Anise

1 Cup Sugar

2 Cups Water

8 Grates of Lemon Peel

16g of Agar Agar

800g Strawberries

METHOD

Put the sugar, water, star anise, cloves and lemon peel all in a big pan on a high heat.

While the water is still cool add the Agar Agar to the pan and whisk it in quickly so it doesn’t clump together.

Bring pan to the boil, the sugar should have dissolved by this point.

Once the water is starting to boil take the pan off the heat.

Cut the stems off the strawberries and add the strawberries to the pan.


Leave the Strawberries to steep until the liquid cools enough to put the pan in the fridge. Take out the cloves and star anise from the syrup.

With a slotted spoon scoop the strawberries into your blender.

Pour the syrup into a blender so there is enough to coat the strawberries (you may have extra liquid left in your pan).

Blend the strawberries and syrup together.

Pass the blended liquid through a fine sieve into a tun to remove the strawberry seeds.

Squeeze juice from half a lemon into the strawberry mixture, stir in and put the coulis into the fridge to set overnight.

Use as desired.
