Roast Potatoes

Christmas Dinner Part 6: Today I’m bringing you one of the most essential parts of any Christmas Dinner, Roast Potatoes!

These are my husbands recipe for roast potatoes and they are incredible! Super easy to make and gives tasty crispy roasties every time.

Serves 2

INGREDIENTS

6 Potatoes

50g Butter

50g Oil

2 Teaspoons Thyme

2 Garlic Cloves

3 Sprigs Fresh Rosemary

METHOD

Preheat your oven to 200°C.

Peel and halve your potatoes. Place in a large pan, cover with water and bring to the boil.

Par boil the potatoes, taking them out after approximately 10 to 15 minutes.

Drain the potatoes and roughly shake them in the colinder. This helps to fluff them to make them crispy.

Tip them out into a large roasting tray.

In a blender add the oil, rosemary, thyme, salt and garlic. Blend together, melt the butter and add it to the blended mixture. Stir together and pour over the potatoes.

Shake the pan until the potatoes are well coated with the oil mixture.

Roast for approximately 30 to 45 minutes, tossing the potatoes every 15 minutes until golden brown.
