Crockpot Root Vegetable Soup

There’s nothing better on a snowy winters day than getting to warm up with a large bowl of soup. This Crockpot Root Vegetable Soup is healthy, hearty and can be adapted with whatever root vegetables you like. Paired with my Homemade Garlic Bread this is honestly the perfect winter lunch!

INGREDIENTS

1 Onion

2 Leeks

3 Carrots

2 Sweden

2 Sticks of Celery

2 Small Sweet Potatoes

1 Cup Yellow Split Peas

2 Vegetable Stock Cubes

1 Teaspoon Thyme

1 Teaspoon Garlic Puree

A Large Pinch of Salt

A Small Handful of Fresh Rosemary

A Small Handful of Fresh Sage

Peel and dice all the vegetables into 2 centimetre pieces.

Place the vegetables into the crock pot with the spilt peas, stock cubes, garlic puree, salt, sage and thyme.

Pour boiling water into the crock pot until the vegetables are covered.

Place the crock pot on low for 8 hours.

Scoop out half the soup into a blender, pulse until smooth then add it back into the crock pot.

Stir the soup together, test and add salt and pepper to taste.

Serve hot with garlic bread and enjoy!
