Simple Tomato Sauce

With the weather turning cooler we picked what may be the last tomatoes of the season from our vines at the weekend. To try and preserve some for the upcoming months I've made this extremely Simple Tomato Sauce, which I've frozen in small portions to add to dishes in the future. It's so easy to make and tastes wonderful by itself on top of pasta or added into so many other dishes.

INGREDIENTS

500g Tomatoes (I’ve used a mix of plum and cherry but you can use whatever you have to hand)

2 Handfuls of Fresh Basil

Olive Oil

Salt and Pepper

METHOD

Core and roughly dice your tomatoes, add them to a deep frying pan.

Roughly chop the two handfuls of fresh basil and add to the frying pan.

Coat with a generous amount of olive oil and season with salt and pepper.

Put the pan over a low heat and stir intermittently until the tomatoes cook down to a thick sauce.

Enjoy by itself, freeze for later or put it into another dish.
