Layered Vegetable Wrap Pizza
I love a mid week pizza, but don’t always have the dough to hand. That’s when wrap pizzas come into there own and this Layered Vegetable Wrap Pizza definitely doesn’t disappoint! Cheesy, tangy and filled with vegetables, what’s not to love?

INGREDIENTS
2 Tortilla Wraps
1 Tablespoon Tomato Puree
1 Red Pepper
2 Spring Onions
1 Tomato
1/2 Red Onion
1 Tablespoon Balsamic Vinegar
2 Handfuls Grated Cheese
1 Handful Fresh Basil
METHOD
Preheat your oven to 200°C.
Place one of your wraps on a baking tray, spread approximately a tablespoon of tomato puree on the wrap.
Finely dice the red pepper, sprinkle half on the wrap.
Slice up the sping onions and roughly chop the tomato and add to the wrap.
Sprinkle over a handful of your grated cheese.
Add the next wrap on top of the cheese, top with some balsamic vinegar and the rest of the red pepper.
Finely slice half a red onion and add to the wrap with the rest of the red pepper and a handful of basil. Sprinkle over another handful of grated cheese.
Place the wrap pizza in the oven for approximately 10 minutes.
