Aubergine and Tomato Linguini

I love an easy pasta recipe and this Aubergine and Tomato Linguini is perfect. It takes a few simple ingredients and takes less than half an hour to make a delicious meal.

Serves 4

INGREDIENTS

2 Onions

2 Small Aubergines

2 Cans Diced Tomatoes

1 Teaspoon Cumin

1 Teaspoon Paprika

1 Teaspoon Garlic Salt

1 Teaspoon Mixed Herbs

300g Linguini

METHOD

Dice the onion and aubergine.

Add the diced onion to a pan with some oil and place over a medium heat.

Let the onions soften slightly then add the diced aubergine to the pan with the herbs and spices.

Stir everything together and cook until the vegetables have softened down.

Once softened add the tomatoes to the pan, stir everything together and lower the heat.

Leave simmer until the sauce reduces by about a third.

Heat a large pan of salted water to a rolling boil. Add your linguini and leave cook until al dente.

Drain the linguini and top with the aubergine and tomato sauce.
