Cranberry Oat  Cookies

Sweet, soft cookies made with dried cranberries, ground almond and oats. These Cranberry Oat Cookies are delicious! The flavours remind me of Christmas, the perfect way to kick the first weekend in December off!

I first introduced to this flavour combination years ago when a family friend brought us her version of cranberry oat cookies. Over the years I’ve adapted her recipe based on what I had to hand. This version is the one I keep going back to so I thought I’d share it. I hope you enjoy them!

INGREDIENTS

165g Plain Flour

25g Ground Almond

165g Golden Caster Sugar

50g Porridge Oats

40g Dried Cranberries

150g Butter

1 Egg

METHOD

Preheat the oven to 190°C.

Sieve the flour into a mixing bowl.

Stir in the almonds, sugar, oats and cranberries.

Melt the butter and stir it along with the egg yolk into the dry mixture. Mix thoroughly to combine.

Take a spoonful of the cookie dough and place on a lined baking tray. Press with a fork to flatten slightly.

Bake for 12 minutes.

Leave to cool for a few minutes, then enjoy!
