Chocolate Ameretto Truffles

These Chocolate Ameretto Truffles are a staple my household in the run up to Christmas. They are made from crushed amoretti and digestive biscuits, mixed with dried fruit and coated in a rich dark chocolate, butter and ameretto mixture. So delicious and make a great gift if you need one for somebody who has everything!

INGREDIENTS

250g Dark Chocolate

125g Butter

3 Tablespoons Golden Syrup

500g Raisins

250g Digestive Buiscuits

125g Amoretti Buiscuits

70ml Ameretto

100g White chocolate

Red and Green Writing Icing

METHOD

Melt together the dark chocolate, butter and golden syrup over a gentle heat.

Crush the buiscuits in a ziplock bag. Add them to a large mixing bowl along with the fruit and brandy. Pour over the chocolate mixture and mix together.

Using your hands take a small amount of mixture and roll into a ball before placing on a large roasting tin. Repeat until the mixture is used up.

Leave cool and set in the fridge for approximately an hour.

Melt the white chocolate. Take the chocolate balls out of the fridge and spoon a small amount of white chocolate onto each ball.

Place back in the fridge for 30 minutes.

Take out and decorate with holly berries and leaves using the writing icing.

These store well in the fridge or in an airtight container for up to a week.
