Easy Yasai Noodles

If you’re looking for a quick and delicious Friday night dinner look no further. Simple, tasty and packed full of vegetables these Easy Yasai Noodles have it all. They are quicker and cheaper than running our for takeout so why not give them a try tonight?

INGREDIENTS

1 Aubergine

1 Red Onion

160g Mangetout

2 Heads of Bok Choi

250g Beansprouts

1 Pack Pre Cooked Noodles

1 Chilli

4 Spring Onions

2 Teaspoons Minced Garlic

2 Teaspoons Ginger Puree

2 Teaspoons Ground Coriander

Chilli Oil

Garlic Oil

Dark Soy Sauce

METHOD

Heat your wok over a high heat.

Pour a good slosh of chilli and garlic oil into your wok.

Finely dice your chilli and add to the wok with the minced garlic, ginger puree and ground coriander.

As the spices are geating in the wok, finely slice your aubergine, red onion. Add to the wok and stir intermittently until they soften.

In the meantime prepare your bok choi by cutting the leaves if the head, slice the mangetout in thirds and finely slice the spring onions.

When the onion and aubergine have softened add the mangetout, bean sprouts, spring onions and bok choi to the wok. Toss to combine everything.

When the bok choi has wilted add in the packet of noodles and approximately a tablespoon of dark soy sauce.

Mix together until the noodles have separated and warmed through.

Roughly chop up your cashew nuts and add them to the wok. Do one last toss then serve hot.
