Spiced Pasta

Wet, windy Tuesday evenings call for a good comfort meal. This Spiced Pasta will not disappoint.

It's packed full of vegetables and seasoned with with a comforting mixture of herbs and spices.

I hope you enjoy it as much as I did!

INGREDIENTS

300g Pasta

1 White Onion

1 Large Handful of Kale

1 Litre of Roast Tomatoes

1/2 a Head of Broccoli

1 Red Pepper

1 Teaspoon Onion Salt

1 Teaspoon Basil

1 Teaspoon Garlic Granules

1 Teaspoon Tumeric

METHOD

Place a large pan of salted water over a medium heat and bring it to a rolling boil. Add your pasta and cook until al dente.

While the pasta is cooking peel and finely dice your onion and pepper. Add them to a large frying pan with the garlic, onion salt, basil, turmeric and a large slosh of rapeseed oil.

Place over a medium heat, stir the contents of the pan together and sweat the onions down.

Roughly chop the broccoli and kale. Add the broccoli and roast tomatoes to the frying pan. Stir everything together, then stir through your kale.

Drain your pasta and mix it into the vegetables.
