Saag Aloo

This Saag Aloo is such a great curry, the spices give the right blend of flavour without the heat. Paired with store cupboard staples, this is an incredibly easy comfort meal to make which can feed you for most the week.

Serves 6

INGREDIENTS

6 Potatoes

1 Red Onion

1 Tin Chopped Tomatoes

200g Spinach

1 Tablespoon Ghee

2 Teaspoons Cumin

2 Teaspoons Corriander

2 Teaspoons Garlic Puree

2 Teaspoons Mustard

2 Teaspoons Ginger Paste

2 Teaspoons Tumeric

METHOD

Peel and quarter the potatoes.

Add them to a large pan with cool water. Put the pan over a high heat, bring to the boil and leave simmer for approximately 10 minutes.

While the potatoes are boiling, peel and dice the onion.

Drain the potatoes and put aside.

In a large pan add the ghee, cumin, corriander, garlic puree , mustard, ginger paste and tumeric.

Put over a medium heat and stir until ghee has melted.

Add in the onion and fry until softened.

Add the potatoes and tin of tomatoes to the pan mix everything together. Then add in the spinach and a can of water, leave simmer for approximately 10minutes.

Serve over rice and Enjoy!
