Lotus Biscoff Stuffed Cookies

How amazing are these Lotus Biscoff Stuffed Cookies? They are rich chocolate chip cookies, stuffed with Lotus Biscoff Spread.

Honestly so moreish and definitely worth a try!

INGREDIENTS

180g Plain Flour

160g Butter

1 Egg

250g Light Brown Sugar

100g Lotus Biscoff Biscuits

100g Dark Chocolate Chunks

1/4 Jar Lotus Biscoff Spread

METHOD

Place a piece of baking paper onto a flat surface. Take a teaspoon of Lotus Biscoff Spread and drop it onto the baking paper. Repeat until a further 11 times, keeping a few centimetres between the drops of spread.

Place the baking paper with the Lotus Biscoff Spread drops into your freezer for approximately 30 minutes.

Take the drops out and roll them between the palms of your hands into balls. Place the balls back into the freezer for a further 30 minutes.

Preheat your oven to 180°C.

Place your plain flour, butter, egg and soft brown sugar into a large mixing bowl.

Smash up or blend the Lotus Biscoff Biscuits until they form crumbs then add them to the mixing bowl.

Stir until a soft dough forms. Add in the chocolate chunks and stir through.

Take the Lotus Biscoff Spread balls out of the freezer.

Take a large table spoon of the cookie mixture, split it in half and roll each half into a ball. Flatten the cookie balls and place a frozen Lotus Biscoff Spread ball in the centre of one.

Place the second half of the cookie over top and press down on the edges. Repeat until all the mixture is used up.

Place on a pre-lined baking tray and put into the oven for approximately 12 minutes.

Take out, leave to cool for a minute then enjoy while they’re warm!
