Almond Shortbread

If you fancy a twist to the classic Christmas shortbread to share with your family and friends this year you should try this Almond Shortbread.

It has the same wonderful texture of my Chocolate Chunk Shortbread but has a more christmassy feel with the added ground almond.

INGREDIENTS

150g Plain Flour

150g Ground Almond

200g Salted Butter

100g Sugar

Sugar to Top

METHOD

Preheat your oven to 160 °C.

Place your plain flour, ground almond, butter and sugar into a large mixing bowl and beat together until it forms a dough.

Flour your surface and roll out the dough to approximately half a centimetre thick.

Using cookie cutters or a knife, cut shapes from your dough and place them onto a pre lined baking sheet. Leave space between each biscuit as they’ll expand in the oven.

Place the shortbread into the oven for approximately 10 to 12 minutes.

Take out the shortbread when it's going golden on the edges.

While it’s hot, sprinkle extra sugar over each biscuit.

Leave to cool, then enjoy.
