Vegetable Pasta Bake

This Vegetable Pasta Bake is cheesy and delicious. The simplicity of it is honestly what makes it so good. It’ diced fresh vegetables mixed with my homemade sundried tomatoes, herbs, pasta and topped with a lots of melted cheese. What a perfect meal for your Wednesday evening!

INGREDIENTS

1 Onion

1 Red Pepper

1/2 a Courgette

1 Tablespoon Sundried Tomatoes

1 Teaspoon Chopped Garlic

1 Teaspoon Mixed Herbs

1 Teaspoon Onion Salt

200g Pasta

2 Handfuls Grated Cheese

METHOD

Preheat your oven to 180°C.

Top up a pan with cold water, put on a medium heat and bring to boil. Once boiling add the pasta. Leave to simmer until Pasta is al dente.

Roughly dice the onion, pepper and half a courgette.

Add the diced vegetable to a large pan with a large glug of olive oil, the garlic, herbs and onion salt. Put over a medium heat and stir until the vegetables soften.

When the vegetables have softened add the sundried tomatoes yo the pan and stir through.

Drain the pasta and addit to the frying pan. Toss everything together and transfer to a casserole dish.

Sprinkle the grated cheese over the pasta and place the fish on the oven for approximately 10 minutes or until the cheese melts.

Serve hot and enjoy!
