Tuna Puffs

If you’re looking for something simple to cook that uses up some panty staples look no further than these Tuna Puffs. I love how the flaky tuna tastes with the creamy cheese, crunchy walnut and red onions. Perfect as a week night dinner by themselves paired with a salad or made on a Sunday for lunches through the week.

INGREDIENTS

2 Tins Tuna

1 Red Onion

1 Cup Walnuts

1 Cup Grated Cheese (I used a mix of Lactofree Mature Cheddar and Violife Mozzarella Flavoured Grated)

2 Tablespoons Olive Oil

A Pinch of Salt and Pepper

2 Sheets Ready Rolled Puff Pastry

1 Egg

METHOD

Preheat your oven to 200°C.

Finely dice a red onion and a cup of walnuts.

Place in a mixing bowl with two drained tins of tuna, a cup of grated cheese, approximately two tablespoons of olive oil and a pinch of salt and pepper.

Mix to combine all the ingredients in the mixing bowl.

Once combined roll out your two sheets of puff pastry and slicd each sheet into six squares.

Place a tablespoon of the tuna mixture into the middle of a puff pastry square.

Crack an egg into a cup and whisk together. Egg wash the outside of the puff square.

Roll the pastry around the mixture into a tube. Pinch one end of the pastry to form a seal.

Then add some more mixture to the tube. Pinch the top of the tube together to form the puff and place on a pre lined baking tray with the seam of the tube placed down.

Egg wash the top of the puff. Repeat until the puff pastry is used up.

Place in the oven for approximately 25 minutes or until the outside is golden brown.

Serve hot or leave cool.
