Sweet and Spicy Rice

This Sweet and Spicy Rice is a great substitute for a takeaway. Its packed full of flavour and takes less than 20 minutes to make.

INGREDIENTS

1 Red Onion

1 Green Pepper

1 Courgette

1/2 Carrot

2 Packets of Pilau Rice

2 Tablespoons of Honey

2 Teaspoons of Garlic

1/2 Teaspoon of Minced Chilli

2 Teaspoons of Minced Ginger

METHOD

Thinly slice the Red Onion, Green Pepper, Courgette

Add to a large pan on a high heat with oil to soften the vegetables.

Grate half a Carrot into the pan. Add the Garlic, Chilli and Ginger to the pan. Mix everything together.

Add the Honey to the pan, stir in and leave to simmer for a minute.

Once vegetables soften, add the rice to the pan and mix everything in.

Leave simmer for a few minutes for the rice to heat through.

Serve the rice hot.
