Spinach Parcels

These Spinach Parcels are a great midweek meal on their own or as a snack. They are fairly simple to make, have very few ingredients and I would recommend giving them a try.

They can be made with or without feta, if you are looking for a dairy free option for the cheese I would recommend the violife Greek style cheese. I’ve recently come across it and will definitely be buying it again. It's slightly creamier than feta but my family were really impressed by the taste.

INGREDIENTS

900g Packet Frozen Spinach

1/2 Block of Feta (or Feta Alternative)

I Teaspoon Salt

1 Tablespoon Cracked Black Pepper

1 Tablespoon Garlic Granules

1/2 Packet Filo Pastry Sheets

2 Eggs

METHOD

Pre heat your oven to 180°C.

In a large mixing bowl defrost your packet of frozen spinach.

Slice your feta into small cubes and add to the bowl with the salt, pepper and garlic granules.

Mix everything together to for the filling mixture.

On a clean dry surface lay your filo pastry out. Cut the pastry into 3 even strips.

Crack and mix your eggs in a small bowl. Egg wash a strip of the pastry.

If you think you strip of pastry as three squares, add a tablespoon of mixture in the middle of the top square of the pastry strip.

Fold the top corner over the spinach mixture to form a triangle out of the top square.

You then want to fold the triangle with the spinach mixture down the whole pastry strip until all the pastry is used up and you’re left with a triangular pastry parcel. See the picture carousel below.

Egg wash the top of the parcel and put it on a pre lined baking sheet.

Cook for 5-10 minutes either side so both are a golden brown and slightly crispy.

Serve hot or cold.
