Spicy Spinach, Tomatoes and Butter Beans

Nothing better than a super simple mid week meal with little kick to make things interesting.

This Spicy Spinach, Tomatoes and Butter Bean meal takes under 20 minutes to make, so why not try it tonight?

Serves 4

INGREDIENTS

4 Tomatoes

1 Brown Onion

1 Tin Butter Beans

3 Large Handfuls of Spinach

1 Tablespoon Smoked Paprika

1 Tablespoon Garlic Salt

1 Tablespoon Cumin

1/2 Teaspoon Cayenne Pepper

METHOD

First peel and dice your onion. Put in into a deep frying pan with the spices.

Mix the onion and spices together so the onion is well coated. Add a couple tablespoons of oil and put the pan on a medium heat, stirring regularly until the onions are starting to soften.

Dice the four tomatoes into medium chunks. Add the tomatoes to the pan and mix together with the onions.

Let the tomatoes cook down, stirring regularly so the mixture doesn't stick to the pan.

Drain your tin of butter beans and add to the pan. Stir in and leave to simmer for a few minutes so the beans heat through.

Once the butter beans are warmed add the spinach to your pan. Today I've used home grown spinach with big leaves so I've roughly chopped them before adding but this isn't necessary if your using baby leaf spinach. Stir in the spinach until it's wilted.

Serve warm, this time I've served with rice but you could serve with couscous, bulgur wheat or bread.
